Joni Morgan's White Chili
| Ingredient List: |
| 1 lb. - dried Great Northern Beans (or 3 cans drained and rinsed) |
| 2 lbs. - boneless chicken breast, cubed |
| 2 - medium onions chopped |
| 2-4oz. cans - chopped green chilis |
| 4 - cloves minced garlic |
| 2 tsp. - cilantro or coriander |
| 1 1/2 tsp. - oregano |
| 1/4 tsp. - cayenne, ground cloves, cumin and Jalapeños (chopped) |

| 1 tbs. - olive oil |
| 6 cups - chicken stock |
| 3 cups - shredded Monterey Jack cheese (with Jalapeños is best) |
| 1 cup - sour cream |
| Directions: Simmer chicken, cool and set aside. Heat oil & sauté. Stir in spices and sauté 2 min. Add beans (cooked dry beans or drained and rinsed canned beans) and stock. Simmer 2 hrs. Add chicken & 2 c. cheese and sour cream. Garnish with 1 c. cheese. (We also add fresh cilantro to the soup and garnish but that was not part of the original recipe but it is great!) |
