Lemon Zucchini Bread

| 1 1/2 cups - flour |
| 2 tsp. - baking powder |
| 1/2 tsp. - baking soda |
| 1 cup - sugar |
| 2 - eggs |
| large cup - unpealed grated zucchini |
| 1/2 cup - chopped walnuts |
| 1/2 tsp. - salt |
| 1/8 tsp. - ground nutmeg |
| 1/8 tsp. - ground ginger |
| 1/2 cup - oil |
| 1/2 tsp. - lemon juice |
| 1/2 tsp. - orange extract |
| Directions: I always double this recipe to make 2 loaves. I double everything, but the eggs. I add 3 eggs instead of 2. Grease a 9x5 bread pan. Preheat oven to 350. Sift together all dry ingredients and set aside. Grate zucchini and set aside. In a large bowl, beat sugar, oil, eggs, lemon juice, and orange extract. Add flour mixture alternating with zucchini to sugar mixture. Fold in nuts. Blend just until mixed. Pour in loaf pan. Place in middle rack in oven for 55 minutes. Cool 10 minutes in pan. Turn out and enjoy! |
